Bow In The Clouds 6 Stack Cake

I thought after A few "sweet" requests that I would share some more details about this rainbow cake, since to me it was probably the funnest cake I ever made! I regretfully can't take credit for the recipe. For the recipe and instructions follow this link: Cheeky Kitchen (the cutest cooking blog I have EVER seen!). That gal has some serious talent and creativity. I love borrowing her ideas! Be prepared for to spend some time scrolling through lots of recipes filled with expression. Her photos are too darling. :)


But, I also thought I would share a few tips that I also find helpful.





*First, of all, I don't have a double oven or 6 cake pans to make all layers simultaneously, so I did two at a time. (I only have 2 8-inch pans).



*Even though the recipe calls for 2 cake mixes, in actuality, you only use about 1 1/2, because each layer only takes 1 cup of mix. ( I mistakenly used all the cake mix the first time I made this and it was fine, but a little on the tall side) The second time I made it with 1 cup of mix, it turned out just right! :)





* I used my mixer for each layer, washed it out and did the next layer. The blackberries and raspberries mix up pretty easily in the mixer, but I had to chop the blueberries in my blender.





*You can see here I chopped up the raspberries in the mixer with the 1/3 cup of water and the oil that the cake calls for, then I added the 1 cup cake mix, 1 egg, and whisked it all together.





*Then I also added the icing colors (so fun, by the way) and look how pretty that batter is! The kids LOVED this part!





* I cooked each cake at 350 degrees for 17 minutes, cooled, and then froze each layer for about an hour. I always do this so I can handle and frost it so much easier! Plus, it really locks in the moisture and makes it super yummy!

*I am certain we will make this cake again and again! It really wasn't too big of a mess either since I used one mixer for all the layers instead of 6 individual bowls. Mine wasn't as pretty as the original, but I can work on perfecting that with experience. And the second time I made it, it was actually much prettier, but silly me didn't get any photos. Regardless, it is a fun cake and I highly recommend it for a fun baking experience with your children!
